Susy, is playing on her "activity mat" on the floor next to me. She's chirping intently at the baubles that dangle above. Five months! She's five months old, and she fits perfectly in the 12 month sleeper that she's wearing. Crazy. Now you can see why I think Susy is a doozy.
I actually made a menu plan this week! Mainly for dinners.
Monday: 13 bean chili
Tuesday: Chicken jambalaya
Wed: Minestrone (a favorite! I make it every other week, it seems, and fortunately no one complains... even V. likes it)
Thursday: Curry chicken and sweet potatoes in crock pot
Friday: Coconut pancakes for dinner
Sat: Homemade macaroni and cheese
Sunday: Tacos with Carrie's taco meat recipe
Today I made gingerbread for the very first time. The recipe I used was from Nourishing Traditions. It's very good... not too sweet, with a nice, ginger, spicy flavor. Pairs well with a cup of coffee and/or apple slices. I wish I had some whipped cream to add to the top, but I've gotta cut corners somewhere, right?
To my detriment, I love to bake. I love having baked goods on hand, as it's cheaper/healthier (usually) than buying muffins/cookies/scones at the store. I also really enjoy having baked treats on hand in case anyone stops by for a visit. I like being able to offer visitors and friends something homemade. That is, if they last long enough around the house :) One of my good friends came for a visit last Saturday, and I felt bad that I didn't make anything ahead of time. So... there's my disclaimer that I'm not ALWAYS on top of my baking game. hehehe.
Well, other than baking and watching the kids grow, life has seemed to slow down a bit. With the economy and the onslaught of autumn, I've felt a little more pensive and a bit aimless. Especially now that one of my big projects is done. What now? :D Time to get motivated enough to start something new. Motivation is half the battle with me.... I often get in a slump before I even get started.
I have enjoyed writing in my "Mother's Journal" lately. I just bought a simple, black, hardbound sketchbook. I'm trying to write/draw in it at least once a week... it's kind of a combination sketchbook/journal/scrapbook where I reflect on these fleeting early years of V. and S.'s life and what it's like to be their mom. My only rule is to not have rules... it is my "anything" book, and I hope it will be a treasure for my kids one day (and something special for me to reflect on in the future).

it was windy and cooler than usual today so michael and i decided to make brownies. baking is so much more enjoyable on autumny days. :)
it was sort of an impromptu brownie decision so we bought the brownie mix at the store, i wish i had planned better. i hope to make a homemade version on a weekend soon. still, betty crocker brownies are better than no brownies at all!
I love planning meals out, but don't do it as often....I am trying to save money by buying more dry goods to keep in the pantry.
I've also got a journal, a red hardbound book that I write in at least weekly, to reflect my thoughts....it's great!
Planning meals ahead of time would make so much more sense than deciding at 4:30 what I'm going to make for dinner...

crockpot curry chicken sounds yummy! I will have to try that! We did the taco meat last week. Big P didn't like it, it was too spicy (papa loved it because it was almost spicy enough:) i have a journal that i write in, not regularly, but it is focused on the boys. I don't really draw, so I just write a few sentences down, no rules, like you:)

Sounds like a yummy menu! And oh, gingerbread! I wish we could have wheat....coconut flour is fine but it gets old! Sometimes you just want to sink your teeth into wheat. But then I have to digest it....I digress.
I love the 1000 days baby journal you bought me for Jonathan. I love the idea of writing things down because even though I always "treasure these things and ponder them in my heart" I know I need to remember to write them down!
