Lent, oh Lent: A Lent lament and CRAZY CAKE

Just kidding, there will be no lamentations here. Just wanted to say hello. Life always manages to be the CRAZIEST in the spring.... and it'll take a lot of energy to stay in tune with all aspects of life (school, work, family, post-grad life planning, art), all the while finding more time to pray, read and attend services.

Since I have to do more prioritizing now, I think I'll have to lay off the blog. I might post something now and again, and I'll probably continue to read other's blogs, but this Lent there's too much stuff I need to focus on. I'll be back after Lent, for sure!

For my Orthodox brothers and sisters, may your Lent be a blessed one! To any other friends or lurkers, I'll see you again in May if not sooner! God bless, and please forgive me a sinner!

Before I go, I'll leave you with one last recipe. Try it out!

CRAZY CAKE
(From the lenten cookbook compiled by the community at St. John Maximovitch Orthodox Church, Eugene OR)

1 1/2 c. flour
1 c. sugar
1 tsp. soda
1/2 tsp. salt
6 tbsp. oil
1 tbsp. vinegar
1 tbsp. vanilla or almond extract
1/2 c. cold water
1/2 c. applesauce

Combine dry, then remaining. Bake at 375 degrees for 45 minutes or until done.

TOPPING:
1/2 c. brown sugar
4 tbsp. melted margarine
1 tbsp. flour
1/2 c. nuts (optional)

Combine topping and spread over hot cake. Makes 1 round cake.
