Recipes are popping up all over the blogosphere, and that means one thing....!
I haven't done a recipe for a while. Here's one I just cooked up recently. It contains 3 of my staple ingredients: rice, garlic and Italian seasoning (and a fourth, which pops up during lenten seasons, SHRIMP). It also contains cheese, which can be extracted once Lent begins.
I cooked for one, so increase portions as fitting:
Garlic Shrimp and Rice
Time: 15-20 minutes Yields: 1 healthy helping
1 large clove of minced garlic, or equivalent
1.5 T+ of margarine or butter
Frozen cocktail shrimp, thawed, w/o tails or veins
1/2 cup of rice
1 cup of water
a few dashes of Italian seasoning
parmesan/romano cheese (hurry while you can!)
salt and pepper
Prepare the rice. While rice cooks, melt butter in hot skillet or frying pan. Once butter starts to bubble with heat, add minced garlic and cook for 1 minute; stir to prevent burning. Add thawed shrimp to skillet and stir. Add a few dashes of Italian seasoning. Stir mixture on high heat for 3-5 minutes, until garlic and shrimp turn golden-brown. Take off heat. As soon as rice is cooked, add to skillet with shrimp and stir (this helps saturate the flavor of the butter and garlic). Sprinkle with salt and pepper as desired, and top with generous amounts of cheese.
Serve with veggies and enjoy!

I like this dish, it is great with the cheese on it (probably just as good without also) :)

mmm...my father in law makes a very similar dish- but sans the cheese...I think he uses dill, two or 3 cloves of garlic, and lemon juice with the butter (I think he uses a little white wine too, but maybe you can get by without ;)It's very tasty, and the other ingredients can make up for the cheese loss.
